Greek Quinoa Salad (No Gluten)
3 cups Select Stores Organic Quinoa, cooked
1 large Red Pepper (or 1 jar Roasted Red Peppers when in season), chopped
1 medium Cucumber, peeled and chopped
1/4 cup Red Onion, diced
1/2 cup Kalamata Olives
1/4 cup Extra Virgin Olive Oil
Juice of one Lemon
1 tablespoon Hummus
Mix olive oil, lemon juice and hummus to create a dressing. Once quinoa has cooled, combine with roasted red peppers, cucumber, red onion and olives and toss with dressing. Serve chilled.
Serves: 4 – 6
Cooking Time: 15 – 20 Minutes
