Spelt is an ancient cousin of modern wheat, and has many advantages over its more in-bred relative. It is a much hardier grain, and grows well without artificial fertilisers making it a popular choice for organic farmers. It also has a broader nutritional profile than regular wheat as it is much closer to the wild grasses that all cultivated grains started life as.

Unlike modern wheat it has not been selectively bred just to make bread, so it has a lower gluten content, higher amounts of amino acids as well as more minerals and B vitamins. Because of the lower gluten content it is often better tolerated by those with a sensitivity to wheat, although it is still a wheat variety, does still contain some gluten, and so is not suitable for those with celiac disease.

Spelt also has a very pleasing nutty taste to it, and makes a lovely alternative to the often bland taste of standard wheat flour.
