BEETROOT, PUMPKIN AND FETA SALAD

Ingredients:

600g butternut squash

2 medium beetroot bulbs

150g feta cheese

200g baby spinach

Organic Extra Virgin olive Oil

Salt and Pepper

Description:

Pre heat oven to 200 degrees. Chop up butternut squash (can leave skin on if preferred), into 5 cm cubes, place in a baking tray. Drizzle with olive oil, sprinkle with salt and pepper. bake till tender.

Peel and chop beetroot into 5cm cubes, place in a pan and cover with water. Add a sprinkle of salt and cook over a medium heat for around 20 mins. Drain.

All recipes will make 8 ounces or 250ML.

3 small apples juiced

1 cup uncooked wholemeal couscous
1 cup brown lentils
1tbsp olive oil
1 lemon
1 cup cherry tomatoes
2 cups rocket or mixed greens

1 Head of Cauliflower, cut into florets

1 medium onion, chopped

2 cups dried red lentils, picked through and rinsed

14 oz can diced tomatoes

1 tsp chopped garlic. (2 cloves)

1 tsp fresh ginger root, grated

1 1/2 tsp cumin seeds

1/2 teaspoon black mustard seeds

1 tsp coriander seeds

1 tsp turmeric
