Coconut Chicken Curry Stir-fry

3+ tablespoons Creamed Coconut
1 cup water
1/4 cup plain yogurt
5 stalks coriander (or to taste)
1 1/2 tablespoons curry powder
2 large cloves fresh garlic
chunk of fresh ginger to taste
1 1/2 teaspoon Himalayan salt

Serves 2
Ingredients
◦1 pint water
◦1 tbspn bouillon
◦fresh ginger, the size of the last joint of your thumb, cut into tiny sticks
◦2 cloves garlic, roughly chopped
◦1/8 tsp cayenne
◦2 onion, chopped
◦2 potatoes, cubed
◦1 small squash or pumpkin, cubed

◦6 apples, sliced 1cm (1/2 in) thick
◦2 tbsp sugar
