Orange Quinoa Muffins with currants (wheat/gluten/sugar free)

23 February 2012 @ 7:49 am |

I made one test batch of these muffins with fresh orange juice and zest – they were scrumptious.

The Taste

Quinoa has become one of my favorite gluten-free flours to work with. It behaves well in nearly everything and lends a subtle, earthy, almost nutty taste. I wanted a muffin I could enjoy without being too heavy or sweet, so I decided to top the muffins with currants instead of mixing them into the batter. The natural sugars caramelize in the oven…

I have recently been diagnosed with Coeliac’s disease what tips would you recommend for my diet?

It is estimated that 1 in a 100 people may have Coeliac disease, so first things first, don’t feel too hard done by. As for how to manage it, the answer is both very simple, and quite difficult.

Coeliac disease is an inability to digest gluten, a protein found in wheat, barley oats and rye. There are plenty of people with a sensitivity to either just wheat or all gluten containing grains, but Coeliac disease is a step beyond this, with sufferers lacking…

A glossary of grains

Amaranth – a South American grain and relative of quinoa, amaranth has a high protein and calcium content. Can be cooked like brown rice, popped or sprouted.

Buckwheat – no relative of wheat, and gluten free, buckwheat flour makes excellent savoury pancakes and noodles. Kasha refers to toasted buckwheat and is one of the…

Don’t know the difference? Here’s a breakdown:

“Wheat-free” literally means a product contains no wheat (white or whole wheat flour). Foods that often contain wheat are: breads, cookies, pizza, pasta, tortillas, fried food – pretty…
