I love the textures happening here in this beetroot & quinoa salad. So lovely & simple. All ingredients at Select Stores Dalkey.

Serves 4

For the salad
1 cup quinoa, cooked & cooled (cooking the quinoa in broth gives it a little more flavour)
6 beets (small to medium sized)
1 leek, chopped
1 avocado, chopped
a handful of spinach, roughly chopped
a handful of coriander, roughly chopped
a small handful of roasted, salted almonds, roughly chopped

It is so easy to get caught up in the craziness of the ‘Silly Season’.

The month of December can be a busy time when we find ourselves overindulging, overspending and generally over extending ourselves – leaving us feeling frazzled… just in time for the new year to start.

I would, for a change, like to start the New Year feeling refreshed.

One way of doing this is to be grateful.

Leek and chickpea soup
serves 2

2 tablespoons (28g) unsalted butter
8 saffron threads
1 large leek, cleaned and finely sliced
grated zest of 1 small lemon
1 carrot, peeled and coarsely grated
2 tablespoons roughly chopped flat leaf parsley
2 ¼ cups (540ml) chicken stock
150g dried chickpeas, soaked overnight and cooked in salted water for 40 minutes or until al dente (or canned chickpeas, if you prefer)
