I love picnics, I consider them heaven. It’s such a great way to spend the day outside, in the sun with friends – relaxing, eating and drinking.
It’s hard to have too much food when you’re out all day. Here is a salad you can use as the centerpiece for your picnic lunch or supper.
PREPARATION TIME: 30 minutes
◦125g rocket, washed and torn into small pieces
◦100g fennel, sliced end to end into .5mm/¼in pieces
◦200g cherry tomatoes, quartered
◦3 spring onions, sliced into rings
◦200g roasted artichoke hearts, quartered
